Baked Ziti with Vegetables

Ingredients

2/3 pound Ziti or any tube shaped pasta
1 cup Carrots
2 cups Broccoli
1 cup Green pepper
1/2 cup Mushrooms
4 cloves minced Garlic
1 1/2 teaspoons dried Basil
1 1/2 teaspoons dried Oregano
1 teaspoon Ground black pepper
1 (28-ounce) Tomatoes, canned, low sodium
1 cup Mozzarella cheese, part skim
1 cup Parmesan cheese

Directions

  • Prepare pasta as directed on the box.
  • While the pasta is cooking, chop vegetables in equal sizes. Mince garlic.
  • Preheat oven to 375 degrees Fahrenheit.
  • Spray pan with nonstick spray and saute carrots, broccoli and green peppers over medium heat. If you need liquid, use the juice from the tomatoes. Cook for 5 minutes.
  • Add mushrooms and garlic and cook for additional 5 minutes (adding more juice if needed).
  • Add tomatoes, basil, oregano, and pepper to the vegetables. Mix well. Cook over low heat for 3-5 minutes.
  • In a large bowl, toss the vegetables, pasta, and mozzarella cheese.
  • Spoon into a casserole dish that has nonstick spray on it and sprinkle with Parmesan cheese.
  • Bake for 30 minutes, or until mixture is hot and bubbly. Cover the dish for half of the time it is in the oven.
