Vegetarian Kabobs

Ingredients

8-12 Cherry tomatoes
1 Red onion(s)
8-12 Button mushrooms
1 Zucchini
1 Green pepper(s)
1 Red pepper(s)
1/2 cup Fat-free Italian dressing

Directions

  • Prepare grill.
  • Wash all vegetables.
  • Slice the red onion, zucchini, red and green pepper into sizes equivalent to the tomatoes.
  • In a plastic bag, pour in Italian dressing.
  • Place vegetables in the bag and shake to coat the vegetables with dressing.
  • Let marinate for at least 10 minutes.
  • If using wooden skewers, soak them in water.
  • Alternating vegetables, thread the vegetables on the skewers.
  • Place on grill.
  • Baste with leftover marinade as needed.
  • Grill 5-8 minutes or until vegetables are tender.
  • 2 kebobs equal one serving.
