Vegetarian Kabobs
Ingredients
8-12 Cherry tomatoes
1 Red onion(s)
8-12 Button mushrooms
1 Zucchini
1 Green pepper(s)
1 Red pepper(s)
1/2 cup Fat-free Italian dressing
Directions
- Prepare grill.
- Wash all vegetables.
- Slice the red onion, zucchini, red and green pepper into sizes equivalent to the tomatoes.
- In a plastic bag, pour in Italian dressing.
- Place vegetables in the bag and shake to coat the vegetables with dressing.
- Let marinate for at least 10 minutes.
- If using wooden skewers, soak them in water.
- Alternating vegetables, thread the vegetables on the skewers.
- Place on grill.
- Baste with leftover marinade as needed.
- Grill 5-8 minutes or until vegetables are tender.
- 2 kebobs equal one serving.
