Vegetarian chili
Ingredients
1 Yellow onion (small)
12 ounces Tofu, extra firm, lite
28 ounces Diced tomatoes (no added salt)
28 ounces Chili beans
14 ounces Black beans
3 tablespons Chili powder
1 tablespoon Oregano
1 tablespoon Cilantro (fresh)
Directions
- Chop onion.
- Spray pan with cooking spray, saute onion over medium heat.
- Slice tofu into small pieces.
- Rinse chili and black beans under cold water to remove more of the sodium.
- Combine first seven ingredients (onion through oregano) in a pan.
- Bring to a boil and simmer for at least 30 minutes.
- Add cilantro the last 15 minutes before serving.
- For additional flavor - add more chili powder or Tabasco sauce.
- For 2 servings use leftovers for lunch the next day.
