Recipes for Good Health

Vegetarian chili

Ingredients

1 Yellow onion (small)
12 ounces Tofu, extra firm, lite
28 ounces Diced tomatoes (no added salt)
28 ounces Chili beans
14 ounces Black beans
3 tablespons Chili powder
1 tablespoon Oregano
1 tablespoon Cilantro (fresh)

Directions

  • Chop onion.
  • Spray pan with cooking spray, saute onion over medium heat.
  • Slice tofu into small pieces.
  • Rinse chili and black beans under cold water to remove more of the sodium.
  • Combine first seven ingredients (onion through oregano) in a pan.
  • Bring to a boil and simmer for at least 30 minutes.
  • Add cilantro the last 15 minutes before serving.
  • For additional flavor - add more chili powder or Tabasco sauce.
  • For 2 servings use leftovers for lunch the next day.
