Low Fat Chicken Tostadas

  • 3 c shredded romaine lettuce
  • 6 - 6 inch flour tortillas
  • ½ c chopped red pepper
  • 6 Tbsp fat free sour cream
  • ½ c chopped fresh tomatoes
  • 6 Tbsp salsa
  • 6 Tbsp low fat cheddar cheese
  • 1 ½ lb cooked boneless, skinless chicken breast, shredded

Combine chicken, lettuce, peppers, tomatoes, and onions in a large bowl. Heat tortillas by placing them one at a time in a dry skillet and turning once until brown & puffy. To assemble the tostadas, place a tortilla on a plate, top with some of the chicken mixture and garnish with sour cream, salsa, and cheese. 6 servings
