Spinach stuffed sole
Ingredients
1 pound Sole
4 cups Fresh spinach leaves
1 tablespoon Garlic
to taste, Ground pepper
1 teaspoon Olive oil
1 teaspoon Butter (melted)
Directions
- Preheat oven to 400 degrees.
- Wash fish.
- If needed, slice fish to 4-ounce portions.
- Wash spinach leaves.
- Dry well.
- Over medium heat, place olive oil in skillet.
- Add spinach, garlic and ground pepper.
- Saute for 2-3 minutes, until the spinach starts to wilt.
- Spray baking dish with non-stick spray.
- Evenly divide the spinach among the sole portions.
- Place spinach in the middle of each portion and roll it up.
- Place in baking dish.
- Brush butter over the top of the sole.
- Bake for about 15 minutes.
