Spinach stuffed sole

Ingredients

1 pound Sole
4 cups Fresh spinach leaves
1 tablespoon Garlic
to taste, Ground pepper
1 teaspoon Olive oil
1 teaspoon Butter (melted)

Directions

  • Preheat oven to 400 degrees.
  • Wash fish.
  • If needed, slice fish to 4-ounce portions.
  • Wash spinach leaves.
  • Dry well.
  • Over medium heat, place olive oil in skillet.
  • Add spinach, garlic and ground pepper.
  • Saute for 2-3 minutes, until the spinach starts to wilt.
  • Spray baking dish with non-stick spray.
  • Evenly divide the spinach among the sole portions.
  • Place spinach in the middle of each portion and roll it up.
  • Place in baking dish.
  • Brush butter over the top of the sole.
  • Bake for about 15 minutes.
