Chipotle Spiced Shrimp

Ingredients

1 tablespoon water
1 pound Shrimp (peeled, uncooked)
1/4 cup Tomato paste
1 teaspoon Olive oil
1 teaspoon Garlic (minced)
1 teaspoon Chipotle chili powder
1 teaspoon Oregano (fresh)

Directions

  • Wash shrimp.
  • Pat dry and place on a plate.
  • Prepare marinade.
  • Combine tomato paste, water and oil in a bowl.
  • Stir well.
  • Add garlic, chili powder, and oregano and mix well.
  • Using a brush (the marinade will be thick) spread the marinade on both sides of the shrimp.
  • Place in refrigerator.
  • Prepare grill.
  • Once grill is ready (about 20 minutes), spray grill basket with non-stick spray.*
  • Place shrimp in the basket.
  • Place on grill.
  • Flip basket (about 3-4 minutes).
  • Serve.
  • *If you do not have a grill basket, you could thread the shrimp on a skewer.
