Chipotle Spiced Shrimp
Ingredients
1 tablespoon water
1 pound Shrimp (peeled, uncooked)
1/4 cup Tomato paste
1 teaspoon Olive oil
1 teaspoon Garlic (minced)
1 teaspoon Chipotle chili powder
1 teaspoon Oregano (fresh)
Directions
- Wash shrimp.
- Pat dry and place on a plate.
- Prepare marinade.
- Combine tomato paste, water and oil in a bowl.
- Stir well.
- Add garlic, chili powder, and oregano and mix well.
- Using a brush (the marinade will be thick) spread the marinade on both sides of the shrimp.
- Place in refrigerator.
- Prepare grill.
- Once grill is ready (about 20 minutes), spray grill basket with non-stick spray.*
- Place shrimp in the basket.
- Place on grill.
- Flip basket (about 3-4 minutes).
- Serve.
- *If you do not have a grill basket, you could thread the shrimp on a skewer.
