Recipes for Good Health

Fruit Kabobs

  • ¾ c cantaloupe chunks
  • ¾ c strawberries
  • ¾ c honeydew melon
  • ¾ c pineapple
  • 1 c orange juice
  • ¼ c lime juice
  • 2 small bananas, 1 inch slices
  • ground cinnamon 1 8 oz.
  • Carton low fat vanilla yogurt
  • 2 Tbsp frozen orange juice concentrate, thawed
  • Can substitute mangoes, plums, nectarines, peaches

Place fruit on 6 inch skewers. Place in glass baking dish. Combine oj & lime juice& pour evenly over kabobs. Cover & chill for 30-60 minutes. Turn skewers occasionally. Stir yogurt and oj concentrate, chill. Discard juice from kabobs. Sprinkle nutmeg or cinnamon over yogurt. Serve dip with kabobs. Serves 8.

1 kabob & 2 Tbsp dip= 91 calories, 1 g total fat, 2 mg cholesterol, 20 mg sodium, 21 g carbs, 1 g fiber, 2 g protein, 6% Vitamin A, 78% Vitamin C, 4% Calcium, 2% Iron
