Shredded Carrot and Raisin Salad

  • 1 1/2 cups shredded, peeled carrot
  • 1 Tbsp sugar
  • 1 1/2 cups thinly sliced, peeled apples
  • 1/4 tsp. Cinnamon
  • 1/4 cup golden raisins
  • 1/4 tsp. Nutmeg
  • 1/2 cup low-fat sour cream
  • 1/8 tsp. Allspice
  • 1/3 cup skim milk
  • 1 Tbsp fresh lemon juice

Combine the carrots, apples, and raisins. Whisk together the dressing ingredients. Toss the dressing with the salad and chill before serving.
